Marshallberg Farm in Smyrna, N.C., produces Osetra caviar. It cost them $10 million to build out and stock this facility to keep their fish living in indoor tanks, and their annual operating cost for necessities like feed, water and oxygen is about $500,000.

WSJ visited the sustainable farm to see how they raise 20,000 sturgeon until they are harvested for caviar production, which can take up to 10 years.
